Am I able to choose which sprites are able to be picked up using the power bracelet, or are there chosen ones? If there are chosen sprites, then which ones can I pick up with the Power Bracelet and the L2 Power Bracelet?

You can choose, those are combo types. But Link doesn't pick up anything, he just pushes it.
