Would it be possible to change the way we enter in the palette for the screen from inputing a value to a drop-down menu that displays the palette names or something? That way, it would prevent having to go back into the Level Palettes to figure out what the number is for the palette u want to use.

You mean for displaying screens in ZQuest?
I'm sure that's what he means. If you go to Data->Pallete, it asks for a number. It would be much easier to select the name of the pallete instead of having to remember the number.
