I'd like to know the best way to rip tiles from NES/SNES etc. games without having to fish through the ROM file to find something that may not even show up.
Mass taking-of-screenshots might do the trick, but I was wondering if there's an easier way.

No, just taking screenshots is the best. Its prefereble the emulator has a snapshot feature, and if it doesn't, either find another one that does or use the print scrn key on the top of your keyboard, then paste it into a .bmp file in Paint.
A thing that will help though, is to find game savestates, that will allow you to get to a certain point in the game(where the graphics you want are shown) without having to play through the game.
I believe Zophar.net has a section full of game save states.
Oh, and this would be better suited, I think, in the ZC Development forum since this doesn't exactly have to with any of ZQuest's properties.
