how do i put different midis in one overworld like in link's birthday?

Go to Quest_Midis and load the one you want. In the D-map you put the one you want in.

You have to have different Dmaps for different areas of the overworld I think, as you can only assign one midi to each dmap

^ yes. In some newer versions you can have midi per screen.
