Is there a way that I can make it so that you start on a different Dmap?

Do you mean initially? That is, when you first start playing the quest? Sure. Go to Quest -> Init Data, then click the Misc tab. Select the starting Dmap in "Starting Dmap."

I think it's set in Quest>Init. Data on or near the last page
