I have my alt (Level 12) that will sign it, and I will join. I will contact you tomorrow if we are both on. I might also have an Night Elf named bob that would sign it, and be immediatly killed.

You can only have one signature per guild per account. I'm sure if they allowed everyone to sign with their alts, there would be thousands of guilds with about three people. : \

Um can you fight PvP on a roleplaying server?

It's the same as a non PvP server. You can only fight somebody of the opposing faction if they're flagged for PvP, which occurs when they:
activate their flag by typing /pvp
attack a flagged NPC of the opposite faction
cast a beneficial spell on a flagged PC/NPC of their own faction
enter an enemy capital city
