Here's a list of them all, and it also explains what they are used to:

Amulet: The cross from Zelda 2, lets you see invisible enemies.
Amulet 2: Improved cross.
Arrow (wooden): The regular, wooden arrow for the bow
Arrow (silver): A stronger arrow, needed to kill Ganon.
Arrow (gold): Very strong, pierces through any enemy. Can also kill Ganon.
Bait: The food given to the Goriya in Zelda 1. Can be given to anyone now.
Big triforce (Triforce of power): The triforce you get when you kill Ganon in Zelda 1.
Bombs: The regular bombs used in most Zelda games.
Bomb bag: Lets you carry more bombs. Can only buy these.
Bomb (Super bomb): The really strong bomb from Zelda 3.
Boomerang 1: Can stun most enemies. And kill some. Flies about 1/3 of the screen.
Boomerang 2: Stronger, plus, this one flies over the whole screen.
Boomerang 3: Really strong and fast boomerang that flies over the whole screen.
Boots: Lets you walk on places that would hurt you without the boots. Spikes, for example.
Bow (Short bow): Launches any arrow.
Bos (Long bow): Launches any arrow, but with higher speed.
Bracelet 1 (Power glove): Lets you push heavy objects that is possible to push.
Bracelet 2 (Titans mitt): Lets you push very heavy objects that is possible to push.
Candle 1: Lets you burn things that is possible to burn. Unlimited times, but only once at a screen.
Candle 2: Lets you burn things that is possible to burn. Unlimited times at any screen. Costs magic.
Clock: Freezes the enemies on the current screen. Temp of perm of your choice.
Compass: The regular compass used in most Zelda games.
Din's fire: Surrounds you with fire, and burns any enemy in its way. Costs magic to use. (optional)
Fairy: Heals you by three and a half heart. Flies around on the screen.
Farore's wind: It is in ZC, but can't be used yet.
Flippers: Allows you to swim and dive in the water.
Hammer: You can pound wooden pillars and such with this. You can also kill monsters with it.
HC piece (Piece of heart): Collect four of these to gain a heart container.
Heart: Restores one heart on your life meter.
Heart container: Makes your life meter longer by one heart.
Hookshot: Lets you grab things far away, and lets you stun enemies.
Hookshot (Longshot): Lets you grab things even more far away than the hookshot. Stuns enemies.
Key (normal): Lets you unlock one locked door or one locked block.
Key (boss): Lets you unlock the boss door or boss lock block in the current dungeon.
Key (master): Lets you unlock any door or block, except boss doors, unlimited times.
Kill all enemies: Kills all enemies on the current screen,
Ladder: Lets you walk over small pits.
Lens of truth: Lets you see secrets that wasn't possible to see earlier. Costs magic to use. (optional)
Letter: Lets you buy things in certain shops that you couldn't buy stuff in before you had the letter.
Magic book: Makes the rays from the Magic wand to burst into fire when it touches something.
Magic container: Makes your magic meter longer by one.
Magic jar (small): Refills your magic by one.
Magic jar (large): Totally refills your magic meter.
Map: Shows you the map of the current dungeon.
Misc item 1: Used for misc things.
Misc item 2: Used for misc things.
Nayru's love: It is in ZC, but can't be used yet.
Potion 1: Totally refills your life meter. Can only be used once.
Potion 2: Totally refills your life meter. Can be used twice.
Raft: Lets you sail on the ocean.
Ring 1 (Blue tunic): Reduces Link's damage by 50%
Ring 2 (Red tunic): Reduces Link's damage by 75%
Ring 3 (Gold tunic): Reduces Link's damgage by 90%
Rupees 1, 5, 20, 50 and 200. Gives you X rupees.
Shield 1 (Wooden): Equipped from start, can't be without.
Shield 2 (Large): Better than the regular shield.
Shield 3 (Mirror): Reflects enemy magic.
Sword L1: Damages the enemies by 1 HP
Sword L2: Damages the enemies by 2 HP
Sword L3: Damages the enemies by 4 HP
Sword L4: Damages the enemies by 8 HP
Triforce parts: Suggested item to recieve when finishing a dungeon.
Wallet 1: Lets you carry 500 rupees instead of the regular 255.
Wallet 2: Lets you carry 999 rupees.
Wand: Shoot magic at your enemies with it.
Whistle (Ocarina): Play it to call on the bird. Or play it on certain places and something might happen....

just some minor changes/additions:
1. The whistle calls a "whirlwind" (at least thats what the sprite is called, so as not to confuse people--it just so happens to be other things, such as a bird, in other quests)
2. The small magic jar does not refill half the magic meter itself, but rather half of a part of a magic meter, meaning half of a "magic container", if you will--likewise, the large magic jar only fills a whole part of a magic meter, or a whole "magic container"
3. Not so sure on this one, have to check it out, but i think the golden arrow DOES NOT peirce through any enemy (although most) like for example, i think it still does not harm a darknut (like all other arrows)
4. Amulet 2: currently has no actual use
5. Bait: In addition to use in "feed the goriya" rooms, it can attact certain enemies so that they wonder towards it
6. Raft: saying you can sail on the ocean may confuse people, as it allows link to "sail" anywhere, i mean, it allows him to sail along "raft" paths, not necessarily just over water
7. Longshot: Currently not in zquest (although its possible to appear in the future)
8. bomb bags: this is not an actual item; "bomb upgrades" might be more appropriate since that's technically what they are (what the room type is called anyway)

You sure? Last time I played, small jars fill up one magic container, and large ones fill up the entire meter.

The 'long bow' has not been implemented yet.

The bait functions in exactly the same way as it did in Zelda 1. No change has been made to it.

I'm not 100% sure, but I seem to remember that the golden ring (ring 3) reduced damage to 1/8, not 1/10 (as you have listed).

Fairy refills 3 hearts, not 3 and a half.

Candle 2 (red candle) doesn't use magic by default. No item does. If the rule is set, both candles consume magic, and at the same rate as each other (you can use them 8 times for each magic container of mp).

The 'boomerang 3' is the fire boomerang. It differs from the magic boomerang (boomerang 2) in that it can stun virtually all non-boss enemies (including bubbles and wizrobes), leaves behind a trail of fire that can damage enemies, and can damage enemies other than just keece and gels (which is all the other 2 boomerangs can hurt).

And idontknow, the magic items work as he listed them (restore 1, restore all). BTW, in this instance 'one' refers to the length the meter increases with the addition of a magic container - which is enough mp to use the wand twice.

The golden arrow will go through an enemy ONLY if that enemy is killed by it. For example, if you shot a golden arrow at a like-like, it would not be killed by it, so the arrow would stop there. Also, darknuts are immune to the arrow no matter what due to their thick armor.

(Long bow has been implemented, longshot has not, as the lv.1 hookshot currently crosses the whole screen.)

correction, the long bow HAS been implimented, it's there in 182, if memory serves. it shoots arrows twice as fast, am I not correct?

Hmm, I must've missed that one then. Never actually seen it in use.
